1 onion chopped
6 Tbls butter
4 cups diced tomatoes
1 can condensed tomato soup
4-1/2 cups milk
1 Tbls sugar
3 Tbls chopped fresh basil
1 Tbls paprika
3/4 tsp garlic powder
3 cups cream cheese or sour cream
- Melt butter , add onion and cook until soft.
- Add the remaining ingredients except cheese or sour cream. Cook until hot and heated through.
- Add cream cheese or sour cream and mix until blended in and hot. Do not boil.
Note: I have used both cream cheese and sour cream and both work well. This is delicious with meaty tomatoes right from the garden. If I use fresh tomatoes, I blanch and peel them prior to adding them to the soup.
