6 Tbls bacon fat

1 onion chopped

1 medium head red cabbage – chopped or sliced

4 small sweet sour apples – sliced

2 Tbls vinegar

4 cloves

2-1/2 Tbls sugar

salt & pepper

  1. Heat bacon fat and saute’ onion until soft, add cabbage, apples, cloves, vinegar, sugar and salt and pepper to taste.  Cook on low heat until tender.  Season to taste.

Note:  I use granny smith apples, they hold up, I don’t bother to peal them.  The peel adds nutrients.  I will also add the chopped up bacon I fried to get the bacon grease, if I didn’t use it for something else.  I will often substitute the vinegar for a dry red wine, gives it a different twist.  You can substitute honey for the sugar.  Remember to pull out the cloves, before you serve.
