6 Tbls bacon fat
1 onion chopped
1 medium head red cabbage – chopped or sliced
4 small sweet sour apples – sliced
2 Tbls vinegar
4 cloves
2-1/2 Tbls sugar
salt & pepper
- Heat bacon fat and saute’ onion until soft, add cabbage, apples, cloves, vinegar, sugar and salt and pepper to taste. Cook on low heat until tender. Season to taste.
Note: I use granny smith apples, they hold up, I don’t bother to peal them. The peel adds nutrients. I will also add the chopped up bacon I fried to get the bacon grease, if I didn’t use it for something else. I will often substitute the vinegar for a dry red wine, gives it a different twist. You can substitute honey for the sugar. Remember to pull out the cloves, before you serve.
