A good 2 Tbls of butter room temp

1 egg

1/2 an egg shell of cold water

1/4 tsp salt

Mix the ingredients above until well blended.  Form a small circle of flour on clean counter and pour egg mixture into the center.  Slowly mix flour into the egg mixture until you have a stiff dough that you can roll out.  Cut the dough in half.

Roll each half of the dough into an oblong rectangle on a floured counter until about a 1/4″ thick. Cut into long noodles, spread out on a parchment lined tray, cover with a towel and let dry over night.

Cook in a pot of salted boiling water, or broth till done.  Cooking time will depend on the thickness of your noodle.  Check often.

Note: I use a pizza cutter to cut the long strips of noodles.  Carefully flip the noodles at least once while drying.  To feed my family at Christmas I make about 4 batches of the recipe-one at a time.  These are delicious cooked and tossed with any sauce, or gravy or just plain butter.
