6 – Mahi Mahi 6 to 8 oz fillets

1 lemon

1 cup mayo

1/4 cup finely chopped onion

bread crumbs

salt

pepper

Mix mayo and onion.  Squeeze fresh lemon juice on Mahi Mahi fillets and season with salt and pepper.  Spread mayo mixture evenly on top of the fish, sprinkle with bread crumbs until well covered.

Bake in oven at 400 for 8 to 10 minutes or until done, (145 degrees).

Sprinkle with parmesan cheese if desired.

Note; I have made this many times.  Be careful to not overcook the fillets.  Always use a thermometer to temp the fish to 145 in the thickest part of the fillet.  Cooking times will vary with the thickness of the fillet.  Serve with lemon wedges.
