1 onion chopped

6 Tbls butter

4 cups diced tomatoes

1 can condensed tomato soup

4-1/2 cups milk

1 Tbls sugar

3 Tbls chopped fresh basil

1 Tbls paprika

3/4 tsp garlic powder

3 cups cream cheese or sour cream

  1. Melt butter , add onion and cook until soft.
  2. Add the remaining ingredients except cheese or sour cream.  Cook until hot and heated through.
  3. Add cream cheese or sour cream and mix until blended in and hot.  Do not boil.

Note: I have used both cream cheese and sour cream and both work well.  This is delicious with meaty tomatoes right from the garden.  If I use fresh tomatoes, I blanch and peel them prior to adding them to the soup.
