2 Avocados

2 oranges

1 small red onion

1/2 cup oil

2 Tbls vinegar

1 tsp mustard

salt & pepper

  1. Combine avocados, oranges and red onion.
  2. Combine oil, vinegar, mustard and salt and pepper, mix well and pour over the avocado mixture.

Notes: Recipe calls for a 1/2 cup oil, depending on the size of my veggies/fruit I cut it in half and then add as needed up to the 1/2 cup.  I substitute a can of mandarin oranges, drained for the 2 oranges.  The sweetness is more consistent in taste.
